Pan Seared Lamb Chops Over Sliced Zucchini

My family loves lamb chops. They are a go-to dish for birthdays, anniversaries, holidays, gatherings with friends, or when we are in the mood for something special to eat with a nice bottle of wine on a weekend. You can make them in a variety of ways --- char-grill, a la Plancha, pan seared, or roasted in the oven. They are delicious using any technique. We like them medium-rare -- slightly charred on the outside but juicy and pink on the inside -- and drizzle them with EVOO and a squirt of lemon (for brightness and to contrast with the richness of the lamb).
This dish was pan seared and seasoned with Fleur de sel, fresh ground pepper, garlic powder, oregano, and thyme. They are served over a bed of organic sliced Italian zucchini but any vegetable will do (fried potatoes, butternut squash, pureed potatoes, etc.). Hope you enjoy them as much as we do!
